So I’m gonna be a doctor. That’s super exciting for me to think about. I have all kinds of plans for my life and I can’t wait to see how it all pans out. But right now I have to heal myself. Because I want to help others heal.
In my first post I mentioned Celiac Disease. I have been off gluten for years, yet in the past year or so, symptoms of internal angry-ness keep appearing. I’ve been trying lots of things and I found something recently that I just know is going to work. It’s more extreme than anything I’ve tried before, but I’m so ready to feel better! I’m starting the Gut and Psychology Diet. Which means I’ve been making bone broth: aka, chicken stock. Which means that this contest is timed just perfectly to give me some motivation (like these symptoms-of-ucky aren’t enough?!) and teach me a thing or two.
So y’all go read about bone broth over at CHEESESLAVE. And if you desire a happier gut and fewer symptoms of almost anything that causes you distress pertaining to your gut (hint: that’s almost everything that causes you distress…) try making some broth and using it as a lovely and delicious tonic.

Why do I waste time worrying?!?
I’m a celiac and I have to eat carefully. Most people sort of freak out when they hear that I don’t eat bread. It makes me…wonder. I eat pretty normal stuff, just not a lot of pre-boxed, pre-cooked, pre-anythinged stuff.
Take tonight. I have chicken. I want it breaded and baked. But I can’t have bread, so what’s a celiac to do? Enter my fave new kitchen device: the coffee grinder. Mine is actually an everything-but-coffee grinder, but that’s a different story entirely. I threw in some flax seeds, salt and pine nuts. Ground that up, but it was way sticky…lots of fats in those 2 items. MILLET to the rescue. Toss some millet in the grinder…hey, add some spices (TJs 21 Seasoning Salute), throw it into a bag and VOILA! Gluten-free “shake and bake” for yummylicious chicken.
Now I must excuse myself and go eat.
